Quick Pickled Red Onions

Method
- Slice the red onions thinly.
- Add the vinegar, water, sugar, salt and black pepper to a small saucepan.
- Heat the liquids until just warm and the sugar and salt have dissolved.
- Add the red onions to a medium sized bowl and pour over the liquid.
- Leave to sit for 30 minutes before using.
- Can be stored in a sterilised jar in the fridge for 6 months.
